This is a homemade version of a fast food breakfast favorite – the breakfast sandwich with delicious syrupy pancakes serving as the bread! No rules here, use a pancake mix, grandma’s from scratch buttermilk pancakes, even whole grain pancakes for something a little more on the healthy side. Easy to make just one, or enough to serve a crowd.
INGREDIENTS - 1 serving
- Parchment paper, about 8” square
- 2 pancakes, about 3” diameter each
- Syrup, Maple or your favorite pancake syrup
- 1 egg
Petit Jean Ham Slice(s), about 3 oz total
INSTRUCTIONS
- Place the pancakes on the paper, with the ‘insides’ facing up.
- Drizzle on a little syrup, just enough for the pancakes to soak up.
- Fry an egg, breaking the yolk to make sure it cooks thru.
- Pan fry the ham also if you like (recommended for the best flavor).
- Place the egg, folder over, and ham between the pancakes and serve on the parchment paper.
