INGREDIENTS - 2 servings

  • ½ cup chopped Petit Jean Ham
  • ½ cup shredded cheddar cheese
  • 4 Eggs
  • ½ tsp chopped green bell peppers and onions
  • ¼ tsp onion powder
  • 1 tbsp jalapeño slices
  • ¼ jalapeño juice
  • ¼ black olive slices
  • ¼ tsp pepper
  • ¼ tsp salt
  • Spinach (optional)
  • 2 spinach and herb or flour tortillas


  1. Beat eggs, salt, pepper and onion powder in mixing bowl until blended
  2. Add other ingredients except shredded cheese
  3. Spray frying pan with cooking spray over medium heat until hot
  4. Pour in egg mixture
  5. Once eggs begin to firm, add shredded cheese to mixture
  6. Place top tortillas on chopping board and add mixture
  7. Place top tortillas and cut into four squares
  8. Preheat conventional oven to 400º
  9. Bake for 15 minutes or until tortillas turn golden brown
  10. (Cook 10 minutes using Quesadilla maker)
