INGREDIENTS
- 3 cups cooked quinoa
- 2 cups baby spinach coarsely chopped (long stems removed) 4 oz white mushrooms, diced
- ⅔ cup chicken broth 1 tsp minced garlic ½ tsp salt
- ½ tsp rosemary
- ¼ tsp pepper
- 1⁄2 to 1 pound diced Petit Jean Ham
- 1½ cups shredded white cheddar cheese fresh parsley for garnish
INSTRUCTIONS
- Mix quinoa, spinach and mushrooms together in a baking dish.
- Mix chicken broth, garlic, salt, rosemary and pepper together and pour over quinoa mixture and stir to combine.
- Top with diced ham and shredded cheese.
- Bake for 30 40 minutes or until casserole is heated through and cheese is melted.
- Garnish with fresh parsley if desired.
