CHEESY HAM AND VEGGIE QUINOA BAKE

INGREDIENTS

  • 3 cups cooked quinoa
  • 2 cups baby spinach coarsely chopped (long stems removed) 4 oz white mushrooms, diced
  • ⅔ cup chicken broth 1 tsp minced garlic ½ tsp salt
  • ½ tsp rosemary
  • ¼ tsp pepper
  • 1⁄2 to 1 pound diced Petit Jean Ham
  • 1½ cups shredded white cheddar cheese fresh parsley for garnish

INSTRUCTIONS

  1. Mix quinoa, spinach and mushrooms together in a baking dish.
  2. Mix chicken broth, garlic, salt, rosemary and pepper together and pour over quinoa mixture and stir to combine.
  3. Top with diced ham and shredded cheese.
  4. Bake for 30­ 40 minutes or until casserole is heated through and cheese is melted.
  5. Garnish with fresh parsley if desired.
