GRILLED HAM & CRANBERRY SANDWICH

Aside from the time together and the fabulous food on Christmas day, one of the big things I look forward to is the leftovers! In our family, we definitely have tons of leftovers. We do the usual, prepare a plate of “traditional” leftovers, heat it up and enjoy them over and over.

As we all know, the same food over and over again can get a little dull and undesired. So, once I’ve enjoyed a plate or two of leftovers I start playing around and getting creative with the food so I can jazz things up a bit. One of my favorite ways to utilize a few things from the containers of leftovers is to make a sandwich. Now, I know sandwiches are the most exciting thing but this sandwich is like no other.

There are lots of people that pile the whole meal between two slices of bread and dive in, but not this girl. I take two of my favorites, salty ham and sweet cranberry sauce and create a delicious, uber flavorful grilled ham and cheese sandwich.

This takes that traditional ham and cheese to a whole new level. I love this sandwich on buttery, brioche toast, but it is delicious on any type of bread on the shelf in the pantry. A little mayonnaise for some tang and some horseradish sauce for a kick and a hint of spice really take the flavors up a notch. Then there’s the cranberry sauce; sweet, crunchy, and tart. Oh my goodness, these flavors along with ham and gooey cheese create a sandwich you will crave over and over again.


GRILLED HAM AND CRANBERRY SANDWICH

INGREDIENTS

  • 2 Slices thick cut brioche toast (or any bread desired)
  • 3 Slices Petit Jean EZ Carve Ham
  • ½ Tablespoon horseradish spread
  • ½ Tablespoon mayonnaise
  • 1 Tablespoon cranberry sauce
  • 1 Slice colby jack cheese
  • Butter, for toasting

INSTRUCTIONS

  1. Lightly toast the bread, either in a skillet or toaster, on low heat for about a minute.
  2. Spread one side of the bread with butter, place butter side down in skillet. Spread horseradish sauce on the side that is facing up, top with cheese, then stack the ham on top of the cheese. Top the ham with the cranberry sauce, spread mayonnaise on the remaining slice of bread, place on the ham mayonnaise side down. Spread butter on the other side of the bread.
  3. Allow bread to toast and become golden and cheese to melt, then flip the sandwich. Toast on the other side for about a minute. Remove, cut in half and serve.
