HAM & CHEESE BREAKFAST CASSEROLE

INGREDIENTS - 6 servings

  • 24 oz frozen shredded potatoes
  • 12 eggs
  • 2 cups half and half
  • 1½ cups cheddar cheese,
  • 1½ cups pepper jack cheese
  • 2 cups chopped EZ Carve Petit Jean Ham
  • Salt and pepper to taste

INSTRUCTIONS

  1. Grease pan. Add frozen, shredded potatoes to the bottom of the pan and sprinkle with salt and pepper.
  2. Whisk the eggs together in large bowl.
  3. Add half and half, season salt, cheddar cheese, pepper jack, and chopped ham.
  4. Pour over the top of the frozen potatoes.
  5. Cover with foil and refrigerate for 2 hours or overnight.
  6. Bake at 350 degrees for 90 minutes.
  7. Let rest for 10 minutes before serving.

In my house, I have one kid who prefers to eat breakfast as soon as she’s awake, another who wants to eat on the way to school and a third kid who begs me to cook a feast fit for a princess every day. When I found this Ham & Cheese Muffin recipe from Weelicious, I knew I’d hit the kid-pleasing jackpot. We’ve tried different muffins before, but I like this one because the Petit Jean Smoked Ham gives it the heartiness to keep my kids full until lunch.

This kid-friendly recipe is easy to make ahead and freeze for busy weekday mornings.
