HAM FRIED RICE

INGREDIENTS

  • 1½ cup cooked Petit Jean Ham, cut in strips or cubes
  • 4 cups firm cooked Rice, cooled
  • 1 medium onion, chopped
  • ½ cup celery, cut diagonally into small pieces
  • ½ cup diced bell pepper
  • 2 tablespoon salad oil
  • salt and pepper, to taste
  • 1 teaspoon seasoning salt
  • 2 tablespoon soy sauce
  • 2 eggs

can add

  • 1 cup sliced fresh mushrooms
  • ½ cup bamboo shoots

INSTRUCTIONS

  1. Cook rice according to package directions for firm texture, cool.
  2. Place ham, onion, green pepper, celery, (mushrooms, bamboo shoots) in a large skillet; saute in oil until onions are soft.
  3. Add salt, pepper and seasoning salt, mixing well.
  4. Add rice and soy sauce, stirring after the addition of each.
  5. Pour well beaten eggs into the mixture and cook over medium hear, stirring constantly, until eggs are set.
  6. Serve immediately.
